Vineyard: Sustainably farmed on our 1.5 acre plot planted in 2016 in alluvial soil.
Wine making: Grapes were hand-harvested on August 30th at 17.7 brix, crushed, destemmed, then gently pressed prior to fermentation in stainless steel. Made in the traditional method style, a second fermentation took place in bottle, where the wine was then left to age for 5 years on the lees. The bottles were disgorged by hand in October 2024.

Numbers: Alc./vol 10.8%; T.A. 9; pH 3.04; RS 1.8g/L
Tasting Notes: This elegant sparkling brut offers aromas of green apple, citrus, and biscuits, with a subtle flintiness. On the palate, bright acidity, with orchard fruits and soft mineral finish.
