SPARKLING CAVALLO ROSSO 2019 - Traditional Method
85% Seyval Blanc, 15% Dornfelder
Vineyard: Sustainably farmed on our 0.5 acre plot of Seyval Blanc planted in 2012 and 0.8 acre plot of Dornfelder planted in 2018, both in alluvial soil.
Wine making: Seyval grapes were gently crushed and destemmed, then fermented in stainless steel. Dornfelder was gently crushed and destemmed, left on the skins for 3 hours, then fermented in stainless steel. Wines were blended prior to bottling. Aged 30 months on the lees. Bottled September 2022, dosage with Dornfelder juice.

Numbers: Alc./vol 10%; T.A. 8.25; pH 3.00; RS 6.79g/L
Tasting Notes: Aromas of red apple, rhubarb, citrus, and maraschino cherries. A delicate, persistent mousse on the palate, with notes of cranberry, apple, and a crisp, zesty finish.
