Stills
Our still wine line offers whites and rosés that are the true expression of our terroir: crisp, aromatic, mineral, elegant. They are fermented and aged six months in stainless steel tanks to retain maximum freshness. Our still whites include: L’Acadie, Epicure, La Crescent (coming soon, in 2021). Our rosé is made from skin contact Pinot Gris.

Sparkling
Reflecting our region’s cooler climate, we have chosen to produce traditional method sparkling wines; a natural choice as sparkling production utilizes grapes that are less ripe in order to maintain adequate levels of acidity and low alcohol content. After spending a minimum of 18 months on the lees, bottles are disgorged, then corked. Our sparkling wines come in three colours: white, rosé and red. 

Wilds
In the spirit of creativity, we are also experimenting with some exciting new wines that follow a natural winemaking approach. Here, our terroir is free to express itself through spontaneous fermentation with indigenous yeast, no additives, no fining, no filtration, and minimal use of sulfites. These wines are offered in limited quantities and are intended for the adventurous tasters.
